Lucas’ Top Taco Tuesday: Fiesta Time Amigos

A local love of mine is Fiesta Time Amigos. I’ve been going there for years, from seeing the company van in my neighbor’s driveway at my childhood home, to catering birthday parties, Fiesta Time has always been my family’s favorite. The mood at fiesta time can only be described as fun, with classic fiesta-ware and beautiful wall art throughout; it always feels so welcoming and warm.

My top 3 tacos from Fiesta Time Amigos, a very hard decision to make, but I know they’re the right ones.

3. Chorizo Street Tacos

The chorizo street tacos are my Go-to when I want a classic, smoky, slightly spicy flavor. It’s always cooked till it has the perfect

crispiness on the edges, laid over the warm tortilla with the fresh onions and cilantro, making it perfect when you crave a simple taco that has the slightest kick. This was the first taco I ever remember trying that stuck with me. The chorizo street taco is an amazing first choice.

2. Birria Tacos

The Birria Tacos are all about flavor and texture. The slow-cooked beef is incredibly tender and soaked in rich, seasoned juices that give it a deep, savory taste. The light, crispy tortillas with the creamy melted cheese in between the layers. The classic diced onions and cilantro pair amazingly with the warm consommé on the side. Each bite is juicy, flavorful, and comforting. It’s always messy, but in the most perfect way.

1. Baja Shrimp Tacos

The Baja Shrimp has to take my number one spot for a few reasons: I’ve always loved seafood. I always top the shrimp with a little bit of hot sauce, and the creamy sauce and crunchy cabbage adds so much to the flavor. I remember the first time I ordered them, I wasn’t sure what to try so I asked my neighbor what he recommends so the next time I went in I ordered them for the first time, I broke out of my classic quesadilla, and finally experienced more than just cheese and tortilla.

The Baja Shrimp tacos are the perfect balance of crispy, creamy, and fresh, every time I order them it takes me back to the first time I tried them. My neighbor was right!

Lucas Selch, a senior here at Atherton, is excited to get the word out about the Aerial and help it grow during his first year on staff. He plans on being a photo editor, photographer, and writer for our news. He is looking to be a photo journalist after high school, which makes him even more excited to be a part of the Aerial. Selch is also in the media arts pathway, which furthers this goal. Lucas is a very creative person, some of his biggest hobbies being music and photography. Outside of school, Selch is in two local bands, Gaia, and Sweet Easy Listening, where he plays the bass. He loves all types of rock music including punk, prog, and psyche. He has a love for Jimmy Hendrix, Pink Floyd, and occasionally Limp Bizkit. His favorite movie is 10 Things I Hate About You, being introduced to it by his girlfriend. At home, he lives with his parents, sister, two brothers, and his two huskies. Lucas plans on using his creative talents to help us expand, and is very excited for what’s to come.

Callie Thornton, Editor

Callie Thornton (12) is an editor and writer. During her first year, Thornton first thought of participating in the Aerial as a way to fill a class period, but contrary to previous intentions, realized that she had fallen in love with journalism. In her second year on the Aerial, Thornton is excited to be deeply involved in journalism again. She has hopes for more perspectives to come through the newsite, expanding outside of school to see more impacts in the community. Thornton looks forward to the new team taking the Aerial to the next level. At Atherton, Thornton participates in archery and track. Passionate about movies, film, and photography, Thornton hopes to go to college to pursue a career in film. Thornton’s top three movies are The Iron Claw, The Way Way Back, and Mid90s. In her free time, she enjoys painting, scrapbooking, listening to music, and spending time with her cat named Tom.
